Chicken & Dumplings

I came across this recipe a while ago and had to try it. My family absolutly loved it and has requested it many times since. It has a wonderful flavor and is easy to throw together. Just be warned, it is so good that you'll be temped to over eat!

Chicken and Dumplings from The Sister's Cafe

3 c. cooked chicken, cut into large pieces
½ c. butter
1/3 c. flour
½ tsp salt
1/8 tsp pepper
3 c. chicken broth
1 can cream of chicken soup (98% fat free variety works great)

Dumplings:
2 c. flour
3 tsp baking powder
½ tsp salt
1 tsp poultry seasoning
1 tsp celery seed
¼ c. oil
1 c. milk

Blend butter, flour, salt and pepper in saucepan. Add chicken broth and cook until thick. Stir in cream of chicken soup and add cooked chicken. Put in a 9x13 pan. To prepare dumplings, mix all ingredients together and stir until moistened. Drop rounded spoonfuls onto chicken and gravy. Bake at 425° for 20-25 minutes.

I have made chicken and dumplings numerous times, the way my Mom made it, steaming the dumplings on top of the chicken and gravy. I decided to try this recipe, and it was really great. I used 6 boneless skinless thighs, and made all as indicated in the recipe.
There were 4 of us eating and I only had 2 "dumplings" and a bit of gravy left over.
My son, who is a chef, said it was wonderful, which I consider high praise.
Will use this recipe again, for sure.
Thanks for this recipe.

This was so delicious!! Made exactly per the recipe and it was perfect. It came out to twelve dumplings on top of the 13x9 pan. For my family of six I will definitely need to double this next time. The flavors were on point and the dumpling had a melt in your mouth texture. Thanks for sharing!!

This was excellent! I also went strictly by the recipe b/c I had never made this (successfully) before. And the flavor was right on. I shredded my cooked chicken and it was great. Thanks so much for this recipe!

I made this wonderful recipe twice and it was gone, no leftovers. The second time I used biscuit mix, cause I must say, I'm lazy, it turned out perfectly fine and no one noticed the change! HAve put this in the recipe file, as my go-to easy meal, when I don't have time to plan dinner. Thanks for this 'What we've got cooking'

I'm wanting to make this for a church lunch and serve around 50 people, do you have a conversion for that?

I made this tonight and it was really yummy! I made it exactly like the recipe and used the regular cream of chicken soup. It was a little salty but with the steamed green beans I made on the side, the saltiness with neutralized I will most definitely be making this again!

Our family loves this recipe, it is a great comfort food and pretty easy to make! We usually get a rotisserie chicken and add potatoes, celery, & carrots to cook in the dish. It is so good, thank you for sharing!
